Raspberry Muffins

Yummy quick muffins, so easy to make and perfect for lunchboxes.


1/2 cup sugar
1 cup plain greek yoghurt
1/3 cup oil
1 large egg
1 teaspoon vanilla extract
2 cups plain flour
1 1/2 teaspoons baking powder
1 1/2 cup fresh raspberries

I literally combined all ingredients into a large mixing bowl, I left the raspberries out until the very end. I used an electric whisk to combine all the ingredients to ensure no lumps. At the end I added the raspberries and whisked. I then added the mixture into 12 muffin lined tins and put in the oven for around 25-30 minutes on 190 degrees.

I liked the muffins slightly brown on top, I also tested them by putting a fork in the muffins, when the fork came out clean I knew they were ready.
