DATE LOAF

This is one of those really easy recipes perfect for when people are coming over and you want to whip up something yummy but very easy, usually I have most of these things in my pantry so it does make life easier.

2 cups chopped pitted dates
4 tbps melted butter
1 teaspoon baking soda
3/4 cup brown sugar
1 cup hot black coffee
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1 & 3/4 cup self raising flour
1 cup chopped walnuts

Preheat oven to 180 degrees, lightly grease a loaf tin

Place the dates, butter, baking soda and brown sugar into a large mixing bowl. Pour the hot coffee into the bowl over the ingredients and stir until all combined. Allow the mixture to cool around 8 minutes should do it.

Add the egg, vanilla, baking powder and flour into a separate bowl and combine, then add to the wet mixture bowl until all combined and smooth, add walnuts or your choice of nuts)

Pour the batter into the tin, gently tapping the bottom of the tin to let the mixture settle evenly.

Bake the bread uncovered for 40 minutes, then cover with foil for another 35 minutes to avoid the top of the loaf to burn while it cooks. Test the loaf with a fork or a toothpick to ensure its cooked, insert into the middle of the loaf and if it comes out clean it is done.

Let cool slightly then transfer out of the tin to cool completely. Once cooled place in an air tight container.
