Do you ever just come home from work and think to yourself, I really don’t want to cook! I really just want to order take out, but then you know its expensive, you really should look in the fridge, but its cold outside and you really just want something yummy to eat? Well this is the perfect throw together meal.

You will need

Packet of sausages any flavour
2 tbsp yellow curry paste (or red or green, it’s upto you)
425ml coconut cream
2 cups broth – any flavour
Either fresh veggies or frozen, either is fine, and you can have as much or little as you like
Corn flour to thicken
1 onion
You can either add some spiral or penne pasta or serve on rice.

I like to use semi frozen sausages but that’s the beauty you can use frozen or defrosted. Cut up the sausages in chunks, you don’t need to be exact.

Dice your onion and fry in a fry pan with a little bit of oil, you can add some garlic if you want to but it’s not a necessity.

Once your onions and lightly browned, all your sausages and cook off. Then add your stock and coconut cream and let simmer. once everything is bubbling away you can add the veggies of your choice, if frozen then you will need to let them cook through before serving but if fresh, I like to cut all of them up and put them in the microwave to steam so they are already cooked when putting them in the pan. I personally like how the veggies all come together this way.once veggies are added and ensure your sausages are cooked through you can then thicken the dish.

Place 2-3 tablespoons in a mug and with a cup of water, mix into a paste and add to your hot sausage pan. keep stirring and the heat with thicken your meal. if you like your meal to be more runny then just half the amount of cornflour mixture.

I stirred through some pasta at the end, but you can also serve this with rice or eat by itself. This is one delicious, easy, quick meal.
