To me I am always thinking of new ways to get my little one to eat more veggies, he used to be a machine and eat everything, now with him turning 2 he is becoming a little bit more fussy. So the following is a great accompaniment with a piece of meat especially steak.
2 florets broccoli
1 bunch cauliflower
1/2 cup corn flour
3 cups grated cheese
3 cups milk
I like to cut up all of my veggies, you can add other veggies if you like as well and then steam them in my microwave, this is a quicker way to get dinner on the table. I usually steam for about 5 minutes.
While your veggies are cooking I then move onto the white sauce, I don’t use butter in my white sauce as I think it is unnecessary calories. I always heat my milk up first until it is close to simmering, in a cup combine your corn flour and some water and stir until it becomes a paste, should resemble glue but stir until all the lumps are out and it is smooth, then add your mixture to the milk. stir continually with a wooden spoon until all combined and keep stirring. Your mixture should start to thicken straight away then you can add your grated cheese and continue to stir until all combined. You can then take this off the heat.
Once 80% cooked I then place them in an oven safe dish.
Pour the white sauce all over so it is covering all of the veggies, this way they wont burn in the oven.
Sprinkle a little extra cheese on the top and put in the oven for around 15-20 minutes on 180 degrees until the cheese on top is slightly brown.
