A lot of banana bread can be very very fattening with a lot of oil and sugar, I stumbled across this one and thought it was great as even though there is a little bit of added sugar it isn’t a bucket load … and this slice is super tasty. I think its a great recipe to make at the start of the week and then freeze for morning tea lunch boxes.
3 or 4 ripe bananas, smashed – I used a whisk to mash it all up
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
Pinch of salt
1 1/2 cups of all-purpose self raising flour
Start by smashing up your banana, I like to whisk them to make them a little bit smooth while still lumpy at the same time. Then add the melted butter and sugar and stir all together. Continue to add the egg, salt & vanilla and continue to mix, last by not least add your flour and mix until all combined.
Add into a well greased bread tin, bake on 180 degress for around 45 minutes, I recommend you check on your bread after 30 minutes to ensure it does not burn as all ovens are different.
